TOP MEADOW FARMS BRASS RING RISING CHEFS CHALLENGE
The delicious taste of Top Meadow Farms artisan beef will be centre stage when twelve young culinary students, from four of Ontarios finest community colleges, compete at the second annual Top Meadow Farms Brass Ring Rising Chefs Challenge held during the North American Beef Congress on Saturday October 29 from 10:00 a.m. to 1:00 p.m. in the Agriplex Building at Londons Western Fair. Some of Ontario's finest culinary colleges are competing this year including Niagara, Humber, George Brown Chef School, and Fanshawe College. The competition is one of only a handful of college-level competitions in Ontario and draws the largest audience attendance during the North American Beef Congress.
Last years event was a tremendous success with Niagara College, led by Michael Olson, taking home first place prize for their entry of Merlot Braised Beef Shank on Blue Benedictine-Celeriac Mash with Bosc Pears, Root Vegetables and Fresh Chanterelles. Competing teams prepare beef entrees using the same cut of Top Meadow Farms artisan beef; this years feature cut is Flat Iron Steak.
Top Meadow Farms provides a $1000 scholarship to each of the students on the first place team. Cuisinart has donated 10 piece stainless steel cookware sets for the second place prize, Kershaw Knives is donating knives for the third place prize, KitchenAid has donated stand mixers for one of the People's Choice Awards and Thomas Allen Publishing has donated Thomas Keller cookbooks for the second People's Choice Award. Via Allegro, a leader in Toronto fine dining helps to celebrate the competitors achievements by sponsoring competition chef jackets for all participants. All cooking equipment is being provided by Garland Commercial Ranges Ltd.
The competition draws a large audience and one hundred lucky audience members will vote on their favourite beef entrees and present the Peoples Choice Awards. The judging panel includes Toronto celebrity chef, Lino Collevecchio from Via Allegro.
